And then our craft comes into play - roasting.

We roast our beans in a drum roaster. This is the traditional way of roasting coffee beans. In this process, the green coffee is heated from the outside in a rotating drum and then the roasted beans are cooled with air.

Unlike so-called industrial roasting, drum roasting does not involve roasting at very high temperatures in an extremely short time. This allows flavor aromas to develop more strongly and, at the same time, acids and bitter substances are better broken down.

Grinding whole beans the right way

Whichever whole bean coffee you choose, you always get freshly roasted and unground coffee beans. This means that before the coffee is made, it has to be ground. This can be done electrically or by hand.

The only important thing is to choose the right grind, so that eventually you get a coffee powder that suits your preparation method.

A fine grind ...

... is recommended for espresso makers, fully automatic espresso machines and Bialetti, while a medium grind is best suited for preparation with hand filters, Chemex and filter coffee machines. With a French press or stamp pot and the Karlovy Vary pot you achieve the best result with coarse ground coffee.
