The quality characteristics of organic coffee

Organic cultivation

Organic coffee comes from mixed crops, where many other local tree species and crops provide beneficial shade.

On the one hand, this increases the yield and, on the other, the trees and shrubs provide mutual protection against pests and soil erosion.

During cultivation, the use of chemical fertilizers and protective agents is naturally avoided.

The harvest

The harvesting of the high quality organic coffee beans is done by hand without exception.

This ensures that no unripe or damaged beans end up in the baskets, thus lowering the quality of the coffee. This requires experienced harvesters who check and pick one coffee cherry after another with a trained eye.

In each further processing step, the aim is to maintain the quality, not to improve it.

Processing

Now it's time to process the coffee cherries. In the first step, the beans are separated from the pulp.

In this way, damage caused by insects can be detected again and defective coffee beans can be sorted out.

The two most common methods are wet and dry processing.

Dry preparation

In dry processing, the red coffee cherries are spread out in thin layers in the sun. They must be turned regularly to allow them to dry evenly and avoid fermentation or rotting. Once the cherries are dry, the skin and pulp are mechanically removed from the beans and stored for further ripening for 30 to 60 days.

Wet processing

In wet processing, the cherries are first placed in a water tank. Ripe fruit sink to the bottom, while unripe fruit float on the surface and are sorted out. A de-pulper then loosens the skin and pulp.

Fermentation removes residual pulp. The beans are then washed and dried either in the sun or by machine.

What happens in the drum roaster?

They lose almost a fifth of their weight, but they gain tremendously in flavor. The heat applied gives them a new structure: First, water evaporates, then color and shape change. Gases and oils escape, and acidity, sweetness and bitterness vary.

If these changes take place slowly and in a controlled manner, as is the case with artisanal roasting, aromas and flavors can develop better,
